Tonight was interesting. I made a turkey yesterday and had plans to make Turkey Enchiladas tonight. I got it all mixed together with the leftover turkey and was down to the last ingredient to add -- enchilada sauce . . . wait a minute, I didn't have any and neither did M/K. I put it in the fridge to do another night and settled on Spaghetti. I even had meat to make meatballs. I cooked the spaghetti, mixed and cooked the meatballs then went to warm the spaghetti sauce . . . wait a minute, I didn't have any spaghetti sauce! How could that be, I buy that by the case. Well, I truly was out except for about 1/8 c. that was leftover in the fridge. Over to my brother's house to borrow pizza sauce and add tomato sauce and some spices to make spaghetti. Next, I get everything all mixed together, turn it on warm then go to the living room. Seconds later Tim is calling me with a little bit of frantic in his voice and I walked back into the kitchen to see him quickly yet strategically pick up the dish towel that had caught fire because it was set too close to the burner I had just turned on. Fortunately Tim was forgiving (he just wished I would have burned one of our older dish towels instead of our new nice one). At that point I wanted to not touch anything, I felt like everything I had tried to do had gone up in flames (one of them literally). Luckily the rest of the evening went ok.

Don't worry I have those kinds of days. I even torched a turkey a few years ago. A little fire extinguisher sauce and the turkey was ready to go.

The good news is. . . you can make your own enchilada sauce! All you need is chili powder, tomato sauce, and I forget. I just look it up on the internet each time. Real easy and cheap!
I should have known I could make my own - that just never crossed my mind. Now I know.
